My apartment is full of happy today. We're staying here for another year! No moving! Also the dining room is clean! And so is my bedroom. I even vacuumed Plora's chair. (It is unrecognizable without the fog of cat hair.) And I did the handwash laundry I've been putting off for the past several months!

We've already been eating garden food, too, which is exciting. Mmmm, organic dandelions.

Chickpea stew!

Soak a bunch of chickpeas overnight. Boil the chickpeas until they are edible. Turn off the heat and wait until about half an hour before you want to eat. (Make sure the chickpeas have enough water, they will keep soaking some of it up.)

Peel and chop a sweet potato. Turn on heat, and add to chickpeas. Check water level again, and add water if you feel like it. Also add two pints (= one quart) canned (or just thoroughly cooked) butternut squash with cooking liquid. Chop up some walnuts and pour them in.

Peel and chop and inch or so of ginger. Cook it in a little oil, then add to pot. Add salt, black pepper, and garam masala to taste. Pour in a bunch of frozen peas. Continue to cook at least until peas are unfrozen and sweet potatoes are cooked. Stir a lot if you want the squash to dissolve, otherwise try to avoid stirring. It won't hurt to cook off the water, if that's what you want to do.


So, that was enough productivity for today (except for the dishes, I guess) and now I can go lie in bed and read! Yay!

:) Hazel asked me to write it down. It was very little work, though part of that is because I no longer am counting the work that was done regarding the squash, which is such a pain when it is fresh.
